We couldn't resist: another book about tasting. And what a book it is! Behind the Glass explores the science behind wine tasting. Why does a wine taste the way it does? It explains the chemistry and sensory processes that determine how we experience wine.
The book is divided into three sections: visual perception, taste, and aroma of wine. This way, you'll learn, for example, what the colors of wine tell us, which substances are responsible for the flavors, and how aromas actually play the biggest role in what we taste.
