Deze palo cortado wordt gemaakt van de delicate most, dezelfde als voor de manzanilla (deze om te precies te zijn) wordt gebruikt. Het rijpt ongeveer één jaar onder flor, daarna oxidatief verder. De officiele website van de bodega zegt 25 jaar. Ik denk zelf iets korter. Deze sherry is namelijk super zacht met gezouten karamel, hazelnoten, toffee en iets van sinaasappel/citroenschil. Dé hit van de sherrycursus.
