Complex notes of long lees ageing (yeasty) and gentle oxidation (baked apples), as well as a hint of flor. Brioche prefume as it opens plus an attractive touch of sour apricot. Lively, dry, and layered with many flavours thanks to the unusual winemaking and all that time on the lees. Fresh and yeasty with a touch of bitter-sweetness on the finish though it is dry.
