Sherry

Laten we maar meteen met de deur in huis vallen: make sherry great again. Dat is ons motto bij Le Club des Vins. De jaarlijkse consumptie van 40 miljoen liter per jaar zullen we niet meer halen en dat is maar goed ook. De tijd van veel en snel geproduceerde sherry is voorbij. Het is tijd voor het nieuwe (oude) geluid van Jerez.

The styles of sherry

Fino →

A straw-coloured, bone-dry sherry with a delicate aroma of bruised apple and almond, matured (min. 2 years) under a protective layer of flor that gives it its unique character.

Fino Viejo →

An older Fino, aged for at least 7 years in the solera system, resulting in a more intense flavour and greater complexity than a standard Fino

Manzanilla →

The same as a fino, but aged exclusively (at least two years) in the coastal town of Sanlúcar de Barrameda, and is said to be slightly more salty and delicate than a fino.

Manzanilla Passada →

A deeper, more complex version of a manzanilla, aged longer, allowing the floral notes to soften. This produces nutty flavors and a richer body.

Palo Cortado →

A sherry with the delicate nose of an amontillado combined with the full flavor of an oloroso, a bridge between the two styles. In practice, a palo cortado is aged under flor for a shorter period than an amontillado.

Amontillado →

A sherry that begins as a fino but matures further after the flor disappears, resulting in a deeper colour and complex notes of nuts and wood.

Oloroso →

A sherry that isn't aged under flor, but undergoes oxidative maturation. This results in a deeper color and a full flavor. Characteristic aromas include dried fruit (figs, raisins) and walnuts.

Pale / cream / medium

Sweet blends of fino, oloroso, or amontillado with PX, respectively. The best versions of this style exhibit a beautiful balance between sweetness and structure.

PX →

Often an exceptionally sweet sherry made from sun-dried PX or Muscatel grapes, thick and syrupy with flavours of raisins, apple syrup and figs.
